It started with a challenge.
Not a shouted dare or some dramatic showdown, but a quiet nudge from a friend. The kind of friend who knows exactly how to push your buttons. We were standing on the Redondo Pier, waves slapping against the pylons below, the scent of seaweed and fried fish lingering in the air. He cracked open a bottle of something he’d been brewing: a beer called Limelight, tart and crisp, full of summer swagger.
“This needs something,” he said, taking a sip. “Something with punch. Something that feels like key lime pie... but chocolate.”
Now, I’m not one to back down from an idea that sounds borderline insane. So I went back to the kitchen, rolled up my sleeves, and got to work.
I didn’t want this to be a gimmick. No artificial lime flavor. No shortcuts. Just the real stuff... fresh key lime zest, hand-grated until the room smelled like a Florida summer. I started with a slightly sweetened dark chocolate base, something that had backbone but wouldn’t overpower the citrus. Bean-to-bar, of course. Always.
The result? Something that made the team stop mid-bite and just smile.

Early tasters from our virtual preview sessions called it “shockingly good.” Some even asked if we’d spiked it with a little magic. (We didn’t. Just lime, love, and a little culinary stubbornness.)
