How It's Made: We pick fresh lemons from a lemon tree garden in Torrance, selected for each batch of lemon bonbons. When the lemons are just ripe, we start to squeeze the lemon juice to a concoction freshly made each day. This serves as the the foundation for the ganache, which balances the sweet yet tart flavor profiles of the lemon with the savory overtones of the Belgium-style chocolates.
Aroma: On the nose, you'll first notice the scent of lemon peel bringing back memories of California springtime. To garnish the chocolates, we use the same lemon peel of the lemon used in the ganache. As you take your first bite, you'll taste the crisp freshness of the lemons, but the sweetness is not overpowering. That is because we use only natural, fresh ingredients, and NEVER syrups. They creates a "lemon pie" delicacy that enhances the dark chocolate, rather than overpowering the taste.
